Kelly Dorfman: Cure Your Child with Food
On May 18, 2023, Ayers Foundation was an honorary guest at a lecture by Kelly Dorfman, renowned nutrition expert and author of Cure Your Child with Food: The Hidden Connection Between Nutrition and Childhood Ailments.
Speaking from the podium in the brand-new auditorium at Middlebridge School in Narragansett, RI, Ms. Dorfman explained how the gut-brain connections affect the health and behaviors of youth in the United States. In her own practice, she has routinely found a reduction in symptoms of ADHD, autism, anxiety and depression to be related to a health-optimized gut biome, created by eating an organic vegetable-rich diet, and thoughtful use of vitamins and supplements.
A severe imbalance of appropriate levels of vitamins and minerals in children is linked to a variety of chronic conditions, as well as mood and behavior disorders. Additionally, high levels of pesticides and herbicides have been found in most wheat and corn products in the US; this has been shown to cause major health complications, including increased inflammation. Corn flour, wheat and sugars are found in many major pre-packaged foods, and therefore unintentional pesticide consumption is often much higher than many people realize. Other vitamin, mineral and hormonal imbalances, such as lack of Vitamin D, choline and magnesium have been correlated to an increase in behavioral challenges, learning disabilities, motor planning difficulty and chronic illness. High-quality multivitamins and fish oils, when used appropriately, can act as a helpful “insurance” against the so-called modern lifestyle.
